Fresh produce is always the go at Claremont Quarter’s Jacks Wholefoods & Groceries – something Kate Mac can’t get enough of. As a busy working mum of a toddler, Kate is always on the lookout for simple ways to add healthy ingredients and flavours into everyday meals.
On an average day, you’ll find Kate in the veg aisle, stocking up on broccoli. It’s one-year-old Bailey’s favourite, as is asparagus, mashed sweet potato and pumpkin. Wild-caught tinned salmon and mackerel, fresh cheese tortellini, yoghurt, bananas and blueberries completes the healthy choices.
As for Kate, her favourite go to easy dinner is maple-glazed salmon with herbed fennel salad. This fresh and healthy recipe perfectly combines sweet and savoury flavours. It makes for a quick and easy light meal, or a side that’s special enough for an occasion.
